Vinification and aging

The making of a very great wine begins in the vineyard. Passion, quality, authenticity, expertise and skills, these are the key words of the wines of the Mayne Lalande estate.

The vinification of the grapes

The vineyard is vinified each year with traditional soil tillage dear to Bernard Lartigue’s heritage  : green harvest , manual stripping, a supply of manure at homeopathic doses after analyzes, no addition of nitrogenous matter. Perfect knowledge of the terroir allows respect for each of the plots and the production of rich and aromatic wines.

As the harvest approaches , the grapes are tasted individually so that their maturity is monitored as closely as possible. The harvest is carried out by hand and the meticulous sorting of each grape is done both in the vineyard and in the winery.

After destemming , we proceed to the vat. We carry out cold pre-fermentation fermentations (12 days at 8 ° C) to extract the color and the fruit gently, while respecting the grapes. During fermentation , temperatures will be between 28 ° and 30 ° homogeneous. Fermentation changes depending on the vintage in order to extract the best tannins, very long and very fine, for more concentrated wines. The choice of extractions depends on the daily tastings of each fermentation tank.

The maceration then takes 15 to 25 days, with a daily taste surveillance. The malolactic fermentation can be carried out in barrels.

Wine aging

The choice and the duration of the aging are determined according to the vintage, the grape variety, the age of the vines and the strength of the wine, but it generally lasts from 14 to 18 months. The cuvée is meticulously monitored day after day to guarantee the elegance and finesse of each of our wines.

To separate the wine from its lees, rackings are carried out regularly from casks to casks. The gluing and filtering ensures a beautiful dress to each of our wines.

We then obtain two cuvées: a first wine under the name Château Mayne Lalande and a second wine under the name of Château Malbec Lartigue, renamed Émotion de Mayne Lalande .

Our wines are bottled at the estate. This knowledge brings us our greatest wealth: elegant red wines under the AOC Listrac-Médoc  (Appellation d’Origine Contrôlée).
